Greek Olive Spice Lamb Grilled Eggplant Rolls
 
These are FAB-U-LOUS…take them everywhere. Garnished with fresh mint flowers still on the stalk ….now that’s beautiful !

  • 1 large eggplant
  • ½ tsp salt
Filling:
Instructions
  1. Cut stem from eggplant and slice lengthwise into ⅛” thick slices. Sprinkle with salt. Let sit in colander for 30 minutes; squeeze any excess water from eggplant.
  2. Over medium heat, cook lamb, onion, garlic, and Greek Olive Spice Blend. Stir often to break lamb into small pieces. Cook until brown and drain any fat. Let cool.
  3. Stir in parsley, olives and goat cheese.
  4. Arrange 2 heaping tbsp of filling into 1 eggplant slice and roll up, securing with a toothpick. Heat grill to medium high heat and grease. Grill eggplant while turning often, until eggplant is softened and filling is heated through.
TO SERVE
  1. Serve with dollops of sour cream and Moroccan Tangerine Red Pepper Jelly.
