Quinoa Salad with El Paso Dressing
Bold in flavour, colour and texture. This healthy and delicious salad is a must-have!! For an interesting presentation, serve this salad in a ½ avocado shell.

Ingredients
Dressing:
- ½ cup Perth Pepper and Pestle Smokey El Paso Red Pepper Jelly
- ¼ tsp lime zest
- ½ cup tomato juice, best quality
- ½ tsp toasted cumin seeds
- 2 dropsPerth Pepper and Pestle Original Liquid Smoke
- Crushed garlic, to your taste
- Small handful, chopped cilantro / basil
- Perth Pepper and Pestle Mesquite Smoked Sea Salt to taste
Salad:
- Red Quinoa, cooked as instructions
- Fresh sweet corn kernels, cooked
- Red onions, chopped
- Green pepper, chopped
- Cheddar cheese, cubed (or Caramelized Onion Cheddar, Mexicana Cheddar, Smoked Applewood Cheddar, Monterey Jack)
Garnish:
- Cilantro, chopped
- Cumin seeds, toasted
- Avocado slices
- Santa Fe tortilla strips
- Sprinkle of Perth Pepper and Pestle Mesquite Smoked Sea Salt
Instructions
- Combine all dressing ingredients and toss lightly.
- Combine all salad ingredients.
- Drizzle with dressing and toss.
TO SERVE
- Garnish with additional chopped cilantro, avocado slices, toasted cumin seeds, Santa Fe tortilla strips, and a sprinkle of Perth Pepper and Pestle Mesquite Sea Salt. Chill before serving.
