Imagine, yummy AND nutritious! and even great in a Pita for lunch. So make lots, you’ll really look forward to these leftovers!

Instructions
  1. Microwave sweet potato pieces in a large microwaveable bowl, til tender and soft. Cool to room temperature.
  2. Add the next 4 ingredients and microwave on high heat til butter melts.
  3. Remove from oven and gently blend ingredients just til barely mixed.
  4. Scoop mixture into a shallow serving dish and allow to cool to room temperature.
  5. Garnish:
  6. Sprinkle surface of mixture with the roasted Pepita seeds, cilantro, and red onions.
  7. Drizzle with the melted Smokey El Paso Red Pepper Jelly and sprinkle lightly with coarse sea salt.
TOSERVE
  1. Serve with Neal Bros. Flax Seed Blue Tortilla Chips, toasted bagel chips, or firm pita chips like Stacy’s brand.
