Really, really tender and really, really easy…we love this recipe.  It creates a lot of sauce, so be sure to make lots of rice.

  1. In a bowl, blend the orange juice with the Perth Pepper and Pestle Simply Shanghai Everything Sauce until smooth.
  2. Add the green onions, orange zest, and sesame oil.
  3. Stir well until mixed thoroughly.
  4. Put the spare ribs in a large wok and add enough cold water to cover.
  5. Bring to a boil over medium-high heat, skimming any scum that rises to the surface.
  6. Cover and simmer for 30 minutes, then drain and rinse the ribs.
  7. Rinse and dry the wok and return the ribs.
  8. Pour the sauce mixture over the spare ribs in the wok and stir gently until the ribs are lightly coated.
  9. Place over a moderate heat and bring to a boil.
  10. Cover then simmer, stirring occasionally for 1 hour, or until the ribs are tender and the sauce is thickened and sticky.
  11. If the sauce reduces too quickly or begins to stick, add orange juice, 1 tbsp at a time until the ribs are tender.
  12. Adjust the seasoning to taste, then transfer the ribs to a serving plate and garnish with sesame seeds and basil.
