These olives are so-o good, but there’s another gold mine here. It’s also the oil that becomes so rich you’ll use it on everything !

Ingredients
  • 2 cups greek kalamata olives (pitted), mostly drained (brine is good for this recipe!!)
  • 2 bay leaves, for decoration
  • 3 tbsp Perth Pepper and Pestle Greek Olive Spice Blend
  • ¼ cup canola oil
  • 6 to 10 cloves crushed garlic or more!!!
  • ¾ cup olive oil
Instructions
  1. In a ziploc sealable container, combine all the ingredients.
  2. Marinate for at least 1 week before serving.
  3. Refrigerate up to 6 months, stirring often.
  4. Scoop olives and some of the oil onto a long rectangular decorative platter. Arrange olives at one end allowing oil to flow to the other end. On another platter, place coarsely chopped focaccia bread to dip into the fabulously flavoured oil. Hence, 2 appetizers!!! Very Greek Olives and very garlic bread dipper !
Useful Ideas For Your Seasoned Very Greek Marinated Olive Oil:
  1. use as a salad dressing
  2. a drizzle for asparagus, halved cherry tomatoes, pasta
  3. a marinade for lamb, steak, pork, roasting vegetables, even mozzarella or feta cheese
  4. toss roasted peppers & BBQ sausage pieces
  5. drizzle into summer gazpacho
  6. add melted butter and roll corn on the cob
  7. brush onto butterflied leg of lamb before grilling or roasting
  8. brush onto BBQ burgers & layer with Swiss cheese or cheddar
  9. marinate buffalo mozzarella OR feta cheese & serve with sliced tomatoes
  10. heat to wilt spinach leaves & serve chopped on lamb burgers with crumbled feta, blue or Gruyere cheese
  11. toss into halved baby grape tomatoes for a quick side vegetable & drizzle with balsamic vinegar and garnish with chopped basil leaves
  12. simplest brush on for BBQ'd bruschetta, focaccia, garlic bread
  13. with brush sundried tomato pesto or a squeeze of tomato paste
  14. marinate fabulous thick steaks for the BBQ even salmon steaks
  15. add basil pesto for easy pasta salad
  16. dressing for potato salad, or sandwiches salads, egg, tuna, instead of mayo
  17. toss with summer vegetables for BBQ and sprinkle of sea salt
  18. toss with potato wedges
