Quinoa and Kale Salad with Walnut and Raspberry Balsamic Dressing

Ingredients
Quinoa:
- 1 (200gm) package Casbah Quinoa
- ¼ tsp Perth Pepper and Pestle Roasted Garlic Liquid Smoke
- 1½ cups water or no sodium vegetable stock
Salad Ingredients:
- 2 cups Kale and Brussels Sprout Salad chopped very fine
- 1 cup chopped red pepper
- 1 cup arugula, chopped fine
- ½ cup celery, chopped fine
- ½ cup walnuts chopped and roasted lightly
Dressing:
- 4 tbsp Walnut Oil
- 3 tbsp Perth Pepper and Pestle Raspberry Balsamic Vinegar
- 3 cloves of roasted garlic ....or more!
Instructions
Quinoa:
- Combine ingredients in a rice cooker and cook until moisture is absorbed. Remove, allow to cool, then fluff.
Salad:
- Add all ingredients to cooled cooked quinoa.
Dressing:
- Whisk the dressing ingredients together and toss into salad.
