Ingredients
Quinoa:
Salad Ingredients:
  • 2 cups Kale and Brussels Sprout Salad chopped very fine
  • 1 cup chopped red pepper
  • 1 cup arugula, chopped fine
  • ½ cup celery, chopped fine
  • ½ cup walnuts chopped and roasted lightly
Dressing:
  • 4 tbsp Walnut Oil
  • 3 tbsp Perth Pepper and Pestle Raspberry Balsamic Vinegar
  • 3 cloves of roasted garlic ....or more!
Instructions
Quinoa:
  1. Combine ingredients in a rice cooker and cook until moisture is absorbed. Remove, allow to cool, then fluff.
Salad:
  1. Add all ingredients to cooled cooked quinoa.
Dressing:
  1. Whisk the dressing ingredients together and toss into salad.
