This makes a fabulous light salad or an amazing spring side dish for pork, shrimp, steak, and especially fish!!

Ingredients
Dressing
- 6 tbsp Perth Pepper and Pestle Ruby Red Grapefruit Red Pepper Jelly
- 1 tbsp Extra Virgin Olive Oil
- Generous pinch of granulated garlic
- ½ tsp coarse sea salt, to taste
- Zest of lemon
Salad
- 7 Jerusalem Artichokes, very thinly sliced or julienned
- 5 medium Kale leaves, chopped
Garnish
- zest of lemon and light sprinkle of sea salt
Instructions
- Combine Dressing ingredients in a bowl. As you slice / julienne the artichokes, place them right away into the dressing to prevent browning. Add chopped Kale leaves and lightly fold until all ingredients are combined.
TO SERVE
- Garnish with zest of lemon and sea salt.
