This makes a fabulous light salad or an amazing spring side dish for pork, shrimp, steak, and especially fish!!

  • 7 Jerusalem Artichokes, very thinly sliced or julienned
  • 5 medium Kale leaves, chopped
Garnish
  • zest of lemon and light sprinkle of sea salt
Instructions
  1. Combine Dressing ingredients in a bowl. As you slice / julienne the artichokes, place them right away into the dressing to prevent browning. Add chopped Kale leaves and lightly fold until all ingredients are combined.
TO SERVE
  1. Garnish with zest of lemon and sea salt.
