It’s real ‘ole timer’ flavour, when caramel corn was made in copper kettles over coke coals. Try this Smokey Caramel Party Popcorn recipe. Subtly smokey and richly caramel. But, sh-h-h! It’s all about our ‘Chefs’ famous secret ingredient’ !

Ingredients
- 2 cups brown sugar
- 1 tbsp coarse sea salt OR Kosher Salt
- ¾ to ½ cup corn syrup
- 1 cup butter
- ½ tsp baking soda
- 1 tsp vanilla
- ½ to 1 tsp Perth Pepper and Pestle Original Liquid Smoke (or Roasted Garlic Liquid Smoke )
- 6 qts popcorn (no salt / butter)
Instructions
- On medium heat, heat first 4 ingredients till dissolved. Continue to boil til candy thermometer reaches 300ºF (hard crack stage).
- Remove from stove and sprinkle with baking soda, vanilla and Original Liquid Smoke (or Roasted Garlic Liquid Smoke ) and stir into sugar mixture, briefly.
- In a large roast pan, gradually add syrup to popcorn, mixing well. Bake at 325ºF for 1 hour, stirring every 15 minutes to recover popcorn.
- Pour on well buttered tray (or parchment paper) and break apart.
